Our Story

Not every bakery
deserves the name.

MAST was founded on a simple conviction: that the bread on your table should be the best part of the meal — not an afterthought, not something bought yesterday, but something made with time, attention, and real ingredients.

We started in a small kitchen on South Moger Avenue, building a sourdough starter that has been alive for years and a reputation that spread through word of mouth. Today, we still bake every morning before dawn, and we still turn down suppliers who won't meet our standards.

Our grocery side grew the same way — by seeking out producers who care as much about their craft as we do about ours. Olive oils from single estates, aged balsamics, small-batch preserves, and cheeses from local creameries. Everything here has a story worth telling.

The Craft

Time is the
secret ingredient

Our sourdough ferments for 36 to 48 hours. We don't rush it — because rushing is how you end up with bread that looks fine and tastes like nothing. The long rise develops flavor, creates an open crumb, and makes the bread easier to digest.

We mill our own flour in small batches so we know exactly what's in every bag. Our butter is European-style, 84% fat, from creameries we've visited. Our chocolate is Valrhona. These aren't luxuries — they're the floor, not the ceiling.
